Start from usable capacity rather than raw capacity. A two-bay mirror leaves you the size of one drive, a four-bay array with single parity leaves three drives' worth, and dual parity in a six-bay unit leaves four. Work out what you need to store three years from now, apply the parity loss, and only then look at drive sizes. It is far cheaper than discovering the shortfall once the array is built and populated.
Then decide how much you care about recovering from mistakes rather than failures. Parity handles a dead disk. It does nothing about a folder deleted last Tuesday, an encrypted share or a stolen enclosure. Filesystem snapshots and a copy that lives somewhere else are what cover those, and both are choices made when the unit is first configured rather than features bolted on afterwards.
